Is there a way to get golden amber?

From golden oak trees

Not yet
I think

Should be easy to adjust the loottable so mining golden oak logs drops both themselves and amber

its not that easy because they shouldn't drop from placed versions
but we're not doing it that way iirc

right
In the original Aether they dropped skyroot logs and not themselves so I see how that could be a problem
Perhaps a blockstate?
Like how leaves have the persistent tag when player placed
